Cheese is a perishable product and should be kept in a refrigerator (in the veggie or cheese drawer) or equivalent cold storage.
Chevres should last several weeks in your refrigerator unopened. Once opened, store with minimal air contact (such as in a plastic baggie) and use within 1 week. Unopened vacuum-sealed packages also freeze well for up to 6 months without compromising flavor or texture. Simply thaw in refrigerator overnight when ready to use.
Aged cheeses are generally good in refrigerator unopened for 4 to 6 months. They should be wrapped in either cheese paper, wax paper, or plastic wrap after opening.

Most cheeses taste their best when served at room temperature. Take them out of the fridge and unwrap a half hour before serving. This allows the flavors of the cheese to truly be expressed!
To use our chevres on salads: use straight out of the fridge and use a folk to crumbled onto your dish.
Chevres will be creamier and easier to spread at room temp.

We use a microbial rennet (enzymes) that is suitable for vegetarians.

All of our cheeses are made from 100% goats milk from our own goats. It is creamy, sweet, and fresh!
Goat milk is naturally homogenized.
Clean, gentle handling, quick cooling, and happy, well fed goats gives our milk it's delicious character without "goat-iness." People who try it are often surprised...it tastes like milk!
